Egg Roll (wrap or Frankie)

Egg roll is a comfort food for me whenever I have to cook for myself only I usually cook egg roll ,egg burji or khichdi .I make it my own way healthy  and tasty too 😜

 Ingredients-

For Dough –

  • All purpose flour(Maida)-1/3 cup
  • wheat flour -1/2 cup
  • salt -1/4 tsp
  • water
  • cooking oil -1/2 tbsp

For filling (roll)-

  • Egg-4
  • Garlic-2 clove
  • Onion-1 chopped (half thinly sliced and half in to cubes)
  • Tomato-1 chopped
  • Bell papper -chopped in cubes ( I took 3 different  colors of bell pepper)
  • Green Chili -1 (optional )
  • Oraganic tomato ketchup-2 tbsp
  • Sriracha sauce -1 tbsp (I like very spicy 🌶)
  • Roasted flexseed – 1/2 tbsp
  • cooking oil -2tbsp
  • salt to taste
  • black pepper to taste
  • chopped cilantro-2 tbsp
  • white and black sesame seeds for garnishing

Directions-

for dough –

  • Take a mixing bowl add flour ,salt and oil .Mix it well .
  • Add water and knead in to soft and smooth dough,keep aside for 10-15 minutes.
  • Divide the dough into equal portions,take one dough ball and roll it into roti(flatbread )shape.
  • Repeat the process to roll the other dough ball .

filling(stir fry )-

  • take a pan add 1/2 tbsp oil ,add garlic ,onion ,bell peppers stir fry it for a minute now add tomatoes and salt (use little as we use salt in to egg too )and cover it for 2 minutes,now add ketchup and sriracha ,flaxseeds and cilantro .mix it well and turn off the flame ,keep it aside .

egg roll –

  • Now crack the eggs in a bowl (I am using 2 eggs for one roll ) and little salt and black pepper (I am using salt in veggies also )and cilantro ,whisk it well .
  • Heat little oil in a pan ,put the rolled roti in the frying pan .cook it for a minute on a low flame ,flip it to cook other side.(I use cast iron skillet it gives proper texture or feel of kathi roll 😜)
  • Cook it properly from both the sides ,once it is cooked properly,now add whisk egg over it ,(coat the roti with egg ) cover it for 2 minutes and now flip it to cook egg side(other side)for 2 minutes in a low flame .when it done take it out in a plate.
  • repeat the process to cook the other egg coated rotis .
  • take one egg coated roti ,add stir fry veggies and thinly sliced onion at the middle of the roll .
  • Gently roll it and wrap bottom of the roll with butter paper .
  • Garnish it with cilentro and sesame seeds and serve it .
